well, i wouldn't give them an expired carrot if i were u, but if the carrots are just a little bit bendable but not too much and don't look like it has mold growing, then go ahead, but look closely at the carrot....does it look kinda gross? if so, go get new carrots.
Rabbits shouldn't eat any unripe or rotten foods. Only plants that look like they're in a good edible condition for humans should be given to rabbits. Unripe foods can make a rabbit sick.
