You untrain it and then train it your way. But I dont know why you would want to teach a horse differently than what it was taught, unless its a bad habit.

Groundwork is very important to teach your horse, and once you have ground work down pat, you can even teach your horse tricks like smile, yes, and more advanced tricks like bow, lay down and even rearing up!
