In a sealed jar honey will last indefinitely. Honey has been found in Egyptian tombs which was 2,000 to 3,000 years old and still in good condition.

Honey that has been kept for some time tends to go cloudy and thicken. The honey is not 'going off', this is a perfectly normal process where the sugars are starting to crystalize out of solution. You can restore the honey to its original condition by gently warming the jar in a bowl of hot water. Be careful not to overheat the honey because that will spoil it.

How do you separate wild honey from wax?

I recently removed half a dozen honeycombs from an area between floor boards. The bees were entering our house from a small hole in an outside wall. Since it was wintertime, there were no bees to contend with, so it was a relatively easy job. I successfully harvested 2 qts. of wonderful, golden honey. Try this:Put the combs inside a large plastic or ceramic container to keep them clean and prevent a huge mess. Then cut sections of combs that have the honey inside into 2" wide pieces. Next, slice open one face of the comb to expose the honey. Stuff as many comb pieces into a large mason jar as it will hold. Then place the jar on a floor heater vent while the furnace is running- or if it's not wintertime you could use a double-boiler on the stove instead. Leave the jar set on the heat for a few hours until the honey collects at the bottom of the jar. Do not use a microwave! Next, use a wooden spoon to mash up the comb inside the jar. Put a doubled-up layer of cheesecloth over a strainer placed over a large glass measuring cup. Pour the honey out of the jar and into the cheesecloth. You may have to squeeze the cheesecloth to get more honey out, but don't squeeze too hard or you may get large pieces of comb too! Once all of the honey has been extracted from the jar, empty out the remaining wax into another container (you may want to melt it down later for candles, etc). Fill a clean jar with your strained honey and repeat the process until all of the combs have been emptied. Dispose of the combs that don't contain honey. Enjoy!

What makes honey cloudy?

Nectar is a complex mixture of sugars which differs from one flower type to another. Bee enzymes break some of these sugars down (for example, sucrose into fructose and glucose), so honey consists mainly of fructose and glucose, the proportions of these depend on the flowers from which the bees gathered nectar.Honey that is mainly fructose will usually remain clear and runny, but honey that is mainly glucose tends to crystalize and become solid. Honey that is a more equal mixture of the two will start clear, but over time small crystals of sugar will form. At first the honey will just appear a little cloudy, and eventually it will thicken and solidify. This in no way affects the flavour or the quality of the honey -- there is nothing 'wrong' with it. It is a perfectly natural process. If you want to clear honey which is becoming cloudy or has crystalized, loosen the jar lid, but don't remove it, and warm it gently, preferably in a water bath, up to a maximum of 60oC (140oF) until the crystals have dissolved. If you haven't got a thermometer, water this hot is about the hottest you can bear to keep your hand in. Don't overheat the honey or some of the sugar will start to caramelize and you will spoil the flavour.

How do you make honey clear again?

Honey is a supersaturated sugar solution. Clouding and granulation is a perfectly natural process. There is nothing wrong with the honey, it is just the sugars crystalizing out of the solution. Honeys from certain flowers are particularly prone to crystalisation. To make the honey a clear liquid again, heat it GENTLY by sitting the jar, with the lid loosened, in a bowl of hot water, no hotter than you can bear to keep your hand in. Be careful not to get any water in the honey. Raise the temperature of the honey slowly to a maximum of 60oC (140oF). You may need to keep the honey warm for up to half an hour while the sugar crystals dissolve.Do not use a microwave or the dry heat of an oven or by putting the honey in a saucepan. If you do this you will almost certainly overheat the honey which will partially caramelize the sugars and spoil the flavour, making it taste burnt.

When a jar of honey is left unstirred for a long time solid crystals of honey form on the bottom of the jardescribe a method for returning the honey to a sreadable from without having to open the jar?

The solid crystals in the jar is formed when moisture in the air mixes with the honey. In order to get into a spreadable form again you will have to gently heat the jar until the crystals melt. Due to the heating of the jar you will produce pressure inside the jar so you will need to loosen the lid to let out the pressure and the moisture.

Should honey from a bee hive be refrigerated?

Honey will keep indefinitely at normal room temperatures provided it is kept in a closed container. There is no need to keep it in a refrigerator. Honey is hygroscopic, so if you leave leave the lid off the jar for a long time it will gradually absorb water from the atmosphere which will affect its longevity. Honey has been found in jars in Egyptian tombs which was still edible after some 3,000 years.
