Vinegar (acetic acid; CH3COOH) is a mild organic acid. Since eggshells are rich in calcium, it reacts with vinegar spontaneously to produce calcium acetate (CH3COOCa). This ultimately results in dissolution of eggshell with liberation of H2 gas.

If you soak an egg in vinegar the egg obsorbs the vinegar and it appears to become hard boiled and the egg shell gets soft.

  1. I had to do that for a science project. Vinegar slowly takes away the shell of the egg and then it makes the yoke very slimy and weird.
