pretty much yes, the main one we use today is an extended canter this is a very long stride and it isn't as bouncy. the other one is quite often used in dressage. This is called a 'collected' canter which has a much shortert and bouncier stride.

Can a pacing horse rack?

If you are meaning 'rack', then yes a pacing horse can rack... However if you mean 'hack', then yes a horse can also hack.... Hacking is when a horse canters really slowly.... If you ever see a race horse, you will see at the end of the race, the horse canters REALLY slowly... you mainly see this on the winning horse... A hack is so slow that it is pretty much the same pace as a slow trot.

Is canters a noun?

Oh, dude, like, totally! "Canters" is a noun. It's the plural form of the noun "canter," which refers to a three-beat horse gait that's faster than a trot but slower than a gallop. So, yeah, "canters" is definitely a noun.

How do you know if a horse is on the wrong leg when it canters?

If you look down to the front inside leg when your horse is cantering, it should be taking a shorter stride then the outside leg, and that will tell you that the horse is on the wrong lead. You don't nesesarily need to see the whole leg, you can just watch the shoulders, and that will tell you to.
