No it doesn't mean it is a lab rat...unless you bought her from a lab?
If your rat is white with red eyes this means she is what's known as 'albino' which is a total lack of pigmentation. There are albino examples in almost ALL species including humans!
There is nothing wrong with your rat at all, she is just a little bit different :)
