All grazers will eat standing up so that they can make a quick getaway if a predator attacks.
Most herbivores will eat standing up however some smaller herbivores such as squirrels may eat "sitting" on their haunches in order to make use of their forelegs. Also animals such as koalas will not technically be "standing" as they grip on to the branch they are sitting on with three legs/arms and use one foreleg to grasp and eat leaves. Birds most often eat in a standing position as well.
