Good question! There are a lot of answers. I will go with an evolution/philosophy based answer. Since our planet is mostly water, because life began in water (depending on you beliefs), and because water can be an enemy or a friend (i.e. it can drown us, but save us from fire) water possible the most influential part of out environment. We had to evolve to work with it or against it, and working against it would be much less efficient.
