There are several excellent breeds available. Everyone has their preferred breed. Two good breeds to start with are: Leghorn and Rhode Islands.

Various egg production facilities cross breed their own for maximum productivity. Some of these breeds are available through major hatcheries as day old chicks each spring.

I think the best laying chickens are the common garden warrens. They might be your regular type but ours lay at least 1 egg from each chicken a day. I would recommend these chicken because they are such good layers and full of character.

"Taste" will be contingent on the bird's diet, no matter what the breed. A chicken raised to only eat corn and pellets will produce a mild flavored egg. A chicken allowed to supplement his diet with insects and grass "free range" will have a much stronger tasting egg and it will be a darker yellow. If you let it eat onions, garlic, and acidic insects like ants, it will have a very strong, perhaps undesirable flavor.

There are several common breeds considered excellent layers.

Leghorns or any X breed from the leghorn should be prolific layers of pearl white eggs in the medium to large size.

Rhode Island Reds and again most X breeds are found on most small farms and will produce good quality medium brown colored eggs in large and extra large sizes.

Australorpe, Delaware, Hamburg and New Hampshires are also good Layers.
