Cowboys on cattle drives or horse roundups would sometimes use what is called hobbles. Hobbles were two circles usually braided leather connected in the middle by more leather. They were placed on the lower front legs of the horse in the same way that handcuffs work on people. Once the horse grows acustomed to this restraint this was a good way to make sure their horse didn't wander off at night. Sometimes they would put up a temporary corral using rope and this also worked. It wasn't a strong corral but the horses were probably so tired at the end of the day they didn't want to wander off.

Additional: Pickett lines are also used if trees are available.

If they didn't have a corral, they taught their horses to ground tie, and they also hobble them, so they can only take tiny steps so they can't get far. But, if they did have a corral, or a fence of some sort, they would use that. Or, if they had something to tie a horse to, they might tie the horses up.

And in time after these people get to know you I'm sure they will be more than happy to show you have to saddle a horse. Other than that I don't know of any place where you can just borrow a horse, but there are places where you can rent one.
