With a leg hook. It is a metal rod about 3' long with a narrow hook on one end and a wooden handle on the other. The look is about 1/2 inch wide and 2 inches long with the first 1/2 inch of the look tapered wider at the opening.

A very common device I found to work well is a plain, old fish dip net on a 3-5 foot pole. Bought one at Walmart for $8, and it's worked wonderfully for us in catching our free-range hens and roosters. After you snag one, just through a towel over the bird, and it stops fussing almost immediately. Extracting them from the net is not difficult...most of the time they just walk right out.
