"Offal" refers to the organ meats of an animal. Brains are sometimes called sweetbreads and stomach is tripe.

Offal is the broad term for organ meats.

Tripe is the term for the stomach (stomach lining). Brains doesn’t have a separate culinary name unless you consider it in terms of how it is referenced in other languages.

Sweetbreads refers to the thymus or pancreas. I mistakenly thought brains were sweetbreads previously, but after some reading realized my error. Hope that helps.
