I'm not sure where it got started, but I do know, that in mid-evil times, the nights and even commoners would clasp each others wrists in a *handshake* in order to check for concealed daggers... supposedly

EDIT: Above is not correct.. Here:

During Medieval times. Basically it was a way that knights would show that they were not carrying a weapon. An extended open hand was a friendly jester. They didn't shake hands but it evolved into shaking hands as we know today.

Another little trivia fact...... the salute was originated during the same time. Knights would also raise their hand to lift the visor of their helmet at each other to look them in the eye and also confirm friend or foe. CREDIT GOES TO: Answers.Yahoo.com. :)
