They are probably just playing with them selves like my dog would roll over on her back with a toy in her mouth but i think she is just playing :)

It happens more often when other dogs and/or humans start to share the same area. It is just a friendly way of saying you're in my territory and this object is mine.

dogs rolling on decayed matter is just coincidental. due to thick fur dogs roll to either scratch their back or to cool themselves up.
