because the hydraulic system pumps are running when the engine is on (power brakes), assisting you in applying the brakes. if your car did not have a brake assist pump, the pedal would always be difficult to press.

Actually, there is no "hydraulic system pump", but a vacuum assist device. It is that large, round, metal thing that the master brake cylinder is attached to. Obviously, it operates on the engine's vacuum while the engine is running. With the engine off, there is no vacuum, and therefore no assist. There is a big, rubber diaphragm inside it, which is operated on by the engine vacuum. Pushing down on the brake pedal opens up the vacuum. When you let up on the brake pedal, springs return it to the original position. Occasionally they develope small leaks in the diaphragm, and have to be replaced. I have done this once as a "shade-tree" mechanic, who was trained in the U.S. Air Force. It is not an easy job.

Why does a 1995 s10 blazer shut off when brakes are pressed?

Is your brake pedal hard ? If so replace the power brake booster. It sounds like you have a major vaccume leak in the booster when you apply the brakes. Power brakes work off of engine vaccume. If the dieafram is leaking vaccume when you apply the brakes it leans the engine out. ( creates a major vaccume leak ) and engine dies. Hope this helps.

Are the brakes of a 68 mustang supposed to be hard to push?

Compared to todays modern brake systems they will feel hard. Also depends on if they are power brakes or not. Some cars of that era did not have power brakes and they were very hard to push.
