I HAD THIS SAME PROBLEM AND FOUND IT TO BE THE COIL WIRE. IT WAS HEATING UP AND BREAKING CONNECTION. From txbasshound: If you figure it out, let me know. I have a 1994 Cheyenne P/U that's doing the same thing. Acts like it's still trying to choke it. Have replaced the thermostat and the coolant sensor and still is doing the same thing. Was told by a shop that the ECM thinks the engine is still cold even after it's warmed up. I'm still working on this so if I come up with anything, I'll put up a post.

The engine on your 04 5.3L Chevy Tahoe could be knocking until it warmed up because of a bad fuel-air mixture. . The wrong oil could also be a cause.
Ignition Control Module are common to cause this. Loss of spark with heat from the engine, when it cools off, starts up.

It starts by missing and running rough when pulling a load, and worsens until the engine won't run at all.
There are a few key reasons why the air you breathe in needs to be warmed in the nasal cavity. It will shock your system and cause vessels to constrict if not warmed for example.
