The most common (and logical) answer I've heard re: both Christmas trees and wreaths is this: The "evergreen" tree and its branches, and the circular shape of the wreath symbolize the eternal nature of God. Of course, that symbolism is only significant is you are aware of it, and a wreath isn't necessarily implemented this way.
