Given that the four basic ingredients are wheat flour, salt, water and kansui, the noodles themselves are almost certainly vegan .. but they are usually served in a meat based (normally beef or chicken) broth, which would clearly be neither vegan nor vegetarian.

Ramen Noodles are vegan. And most of ramen restaurants has vegan dashi stocks which are made from dried Shiitake mushrooms and Nori. You can request not to include any meat, fish and egg and put dried Shiitake and Nori broth instead of chicken, pork, beef, fish, etc. broth. you can also choose a lot of toppings like Shiitake Mushrooms, Tofu, Vegetables, Nori etc. You can also season it with soy sauce from better taste.

The noodles themselves are vegetarian. The season packet contains chicken, so it is not vegetarian. It depends, most likely it is not vegetarian. If you ever doubt anything just check the ingredients.

Noodles are a grain, I believe they are.

It is always important to check the label for ingredients. Some noodles have beef or chicken stock added.

Almost all cup noodles contain chicken, beef or shrimp. Those ones are not suitable for vegetarians.

Plain noodles are vegan.

The beef and chicken flavorings added are usually not, although some Lidl instant noodles are all vegan (including curry and "chicken" flavoured).

Some of the flavors are, but not all. Surprisingly, the chicken flavor is. It contains no real chicken. Super Noodles prints "suitable for vegetarians" on the back of the flavors that are.
