Most ants are sweet eaters. For those that prefer proteins there are "dual choice" baits that have both & work on many more species if you are unsure what you have . The components of the bait are not terribly important as long as they will feed. What is more important is the active not kill them too quickly, so they make it back home or defeats the purpose. Many times I have found ant drowned in a liquid bait that killed too quickly & of course ants never went away since none of the bait made it back.
Sugar is best for most, since most are sweet eaters. There are a few species that do prefer proteins & many baits have both-just in case.
ants like cheese better than sugar because even though sugar is sweeter when i did this project the ants completely covered the cheese

Sugar for more species as more are sweet eaters, however if you want to play it safe, there are what they call dual choice baits for ants that like sweets and those that prefer proteins all in one.
Some types of ant are attracted to sugar and some to meat. Meat ants would be attracted to the cheese and sugar ants to the sugar.
