Actually, Italian squash is zucchini. Just another fancy name. :) I was confused too, because the organic ones at the store are tiny and seem to be different from zucchini. They aren't though.

If the zucchini gets to be too big the seeds become tough and hard to chew, however if you are able to shred the zucchini the seeds might not be a problem. If the zucchini is not too big, the seeds are still very tender and definitely not a problem.
