You can use Pex however, it must be oxygen barrier Pex which is specifically designed for use with different metals that originate from the boiler, radiators and other parts used on the boiler feed and return. The different metals will create oxidation that will cause the potable water pex pipe to fail prematurely regardless of the temperature rating.
