It depends on what you mean by "go off." It is perfectly safe to freeze them (whole or mashed) for later use, they will not spoil. They will, however, be useless for much of anything except cooking uses (banana bread, banana pudding, etc.) because no matter what shape they were in when they went into the freezer, they will be a pulpy mess when they come out. The water freezing will lyse all the cells and demolish its ability to hold a shape. They are perfectly safe to eat or bake with, though. I usually keep three or four bananas in my freezer so I can make banana bread whenever I want rather than waiting for some bananas to get old enough.
