Regarding Hong Kong is it considered a country because it has its own government and economy?

No, it is not. Though Hong Kong, Taiwan and Macau all have "their own" systems and laws, they share the consititutional law with the mainland China. It is OK to refer Hong Kong as Hong Kong China to illustrate that it is a special regian/area, but it is not OK to regard Hong Kong as a country. Let's look at this question using a different example: are NY, TX, CA countries? They have their own laws and quite different from each other. It's quite similar to the case in China. The mainland China, Hong Kong, Taiwan and Macau all have their all laws, but they share the same constitutional law. Some Taiwanese may claim that they have their own consititutional law but its not recognized publicly.

When was the sovereignty over Macau transferred back to China?

Does Hong Kong and Taiwan have the same currency?

Nope. Hong Kong: Hong Kong Dollar (HKD) - $1 USD = $7.7 HKD approx. Taiwan: New Taiwan Dollar (NTD) - $1 USD = $31.58 NTD approx. HongKong is an "independent administrative region" belonging to China, which has its own currency. Taiwan is a separate, independent nation which also has their own currency.

Why did the gap between rich and poor countries widen so much during the industrial revolution?

The same type of people live in China as live in Hong Kong or Singapore. Those in Hong Kong or Singapore are much better off than those in China. The difference is the legal system. Hong Kong and Singapore have an English legal system. China has a corrupt License Raj legal system. (Greece also has a corrupt License Raj Legal System.) When a corrupt government makes it difficult to make a living, people live in poverty.
