Food can be dried (dehydrated) in a dehydrator, in an oven or even in the sun. The liquid is drawn from the food, leaving it totally dried out. To rehydrate, you add water or fruit juice, depending on the type of food and heat until rehydrated. Drying foods is a wonderful way of preserving them if you can't freeze or can them.
