The answer to this qustion is threefold. First, terror value. If you see some guy coming at you with a multi-bladed knife, odds are you'll be pretty scared. Second, having more blades increases the chance of the knife's user inflicting a lethal wound on his target. Lastly, in brawls or knifefights hitting your target is vital, and having multiple blades increases the probality that you will be able to stab your target, likely killing or incapitating him.
