motor oil (new) will (typicly) be a darker shade as well. hydraulic fluid is normally clear or very close to clear.
note: you should not leave either of these fluid's on you're skin. you should wash hands as soon as you are done handling them.
Wouldn't recommend it. Hydraulic fluid has to pass a different set of standards than motor oil. Motor oil has tackifiers, lower sulfur content and other ingredients that could prove harmful to the seals and other components in a hydraulic system. If it is an emergency only should you do it.

Engine (or motor) oil is mineral based. Hydraulic fluid is vegetable based. Engine oil will soften seals produced for Hydraulic fluid and cause seal failure.

Prior to 1920 vegetable oils were commonly used for hydraulics. They are coming back into vogue because they are "greener". However, most hydraulic fluids are petroleum based. Unless your system specifies non-petroleum oil, the seals will be just fine.
Some manufacturing spec's allow for multi-grade motor oil as well as their own brand hydraulic fluid. As such, we use 10W30 oil in our Bobcat and have never had a problem. If your manufacturer does not specify motor oil, you do so at your own risk. If your motor oil meets the military specification (mil-spec) recommended by your manufacturer you should be OK.
One bad problem when using unspecified fluids could be air-entrainment causing your pump to cavitate--hydraulic additives are specifically designed to avoid that. You can destroy your pump if it cavitates. ~Chaz

Reversing polarity is not possible with an ac motor. Some do have wiring that will allow you to change rotation. The type and model of the motor can tell you if it is reversible.
Vending machines have laser scanners that can tell the difference between the bills.

It would be helpful to know many other factors, such as required torque needed in the application and the rpm. However, its needed in your case, so long as you have a new power source for the hydraulic motor. (IE: a gas engine to power a hydraulic pump, then lines from the hydraulic pump to the hydraulic motor (insert a valve if you wish to control motor speed and/or direction), and then the hydraulic motor. Its important to have a hydraulic tank with enough capacity to hold all the fluid which will be in motion. The more devices in the system, the bigger the tank. Hope this helps!!
