Not all wealthy Romans lived outside the city. Many had a house in the city and a villa outside. The villas were either country residences for breaks from the hustle and bustle of the city, or had farms. Some rich people did live outside the city and this was no different than nowadays. There are people who prefer to live in quieter surroundings.
I think you are answering your own question. They lived very well; lots of slaves, plenty of food and drink, probably a seat in the Senate. That's what wealthy means.
