Basically, you can't delete the "built-in" apps (like Calendar or Safari) unless you "jailbreak" the phone - which voids your Apple warranty. You can only delete apps that you add later.
To delete apps, go to the home screen and hold any icon until they all start to wiggle. Any app that has an X in the corner of the icon can be deleted by tapping on the X. Built-in apps do not have an X, meaning they cannot be deleted. However, you can move them to another screen or a folder - I created a "not used" folder on the last screen where I moved my built-in Calendar after buying a Calendar app. You can move icons and rename folders in iTunes by going to your iPod/iphone and clicking on Apps
