After the turkey has been roasted, use the pan drippings to make gravy. First, prepare a roux by melting 1/2 stick of butter in a sauce pan over medium temperature on the stove top. Add aprox 3-4 spoons of flour to the melted butter and cook it making sure the flour doesn't stick to the bottom and doesn't make clumps. Once this mix is cooked, add the pan drippings and let it simmer to a boil and reduce the temperature until it thickens. If is too thick, you can add water. Hope this helps! Enjoy!!!!

Putting the roaster that you used to cook the Turkey (or other meat) on the stove with usually two burners on (depending on the size of your roaster) - SLOWLY add a little flour (how much depends on how much gravy you're making). Use the water that you cooked the potatoes in as well, adding to the turkey drippings. Add salt and pepper and any other spices you may like. Stir with a whisk until it's boiling and continue to stir for a minute or two as it thickens up. Serve and enjoy!

Making Gravy with Flour From Drippings

Ingredients:

2 tablespoons meat drippings
The remainder of drippings
1 to 2 tablespoons flour
Liquid (milk, water, broth or evaporated milk)
Salt and pepper

Procedure:

  • Remove the meat from the pan it was cooked in.
  • Place pan on stove over medium high heat.
  • Pour off all but 2 Tbsp of the drippings in the pan.
  • Stir in 1 to 2 tablespoons of flour.
  • Stir with a wire whisk until the flour has thickened and the gravy is smooth. Continue to cook slowly to brown the flour, stirring constantly.
  • Slowly add back some of the previously removed drippings.
  • Add either water, milk, broth, or evaporated milk to the gravy, enough to make 2 cups of gravy.
  • Season the gravy with salt and pepper and desired herbs.
