food preperation is getting the establishment ready for the days work ahead; that is getting the restaurant clean so it can be set up, stocking the shelves and side stations with ingredients such as salt pepper, sauces, butter etc. it also means turning on all appliances such as coffee machine, hot water machine and ice machine. turning on the appropiate lights. polishing cutlery and glasses needs to be done too.
