It depends on how fine you want the final product.
If you want medium pieces it can be torn by hand.
If you want it a little smaller cut the head in half. Then chop it with a knife.
If you want it to actually be shredded use a food processor.
An ordinary grater will do the trick. Make sure the cheese is cold, straight from the fridge.
If you're not using the grated cheese immediately, put it in a sealed bag or container, keep it in the fridge and use it within a couple of days.
Personally I prefer to chop onions rather than to shred them, but if I wanted to shred them I would use a grate, the same kind that you would use to make carrot shavings.
