If they are from your own garden, leave the leaves intact and allow them to dry in an airy shed or similar for a few weeks. When thoroughly dry, either cut the leaves down to about an inch above the bulb or plait them together.

Place them in an airy container such as an old orange bag, wire basket etc. or if plaited, simply hang up in a cool dry location. If too warm, sprouting will occur, if too damp they will rot, or if allowed to freeze they will be damaged and subsequently rot.

Certain varieties store longer than others - in general terms, the late season onions that grow for a long time period and brown varieties are the best keepers, but check individual storage times and use the shortest keepers first.

You should store onions in a cool dry place for up two months, however at the end of the 2 months, i would recommend putting them in the fridge.

You can store in the fridge if you want them to retain the flavour more and keep them fresher for longer but it's up to you!

Storing onions in the fridge means that your eyes won't water when you cut them: the volatile oils that affect your eyes and sinuses don't evaporate when the onion is cold.

Potatoes should receive less ventilation than onions, otherwise they wrinkle through dehydration.

Onions cannot be too dry; they cannot dehydrate because of the sealing effect of the outer layers of their multiple skins.

you can store raw onion and potatoes (not cut or chopped) in a cupboard but once they are cut or chopped then they have to be stored in a fridge
