Meatloaf should normally be cooked on 350 degrees for 40 minutes per pound. This varies between ovens, ways it is cooked, and how done a person wants the meat.
You should bake meatloaf at 350 degrees F for 30-40- minutes per pound if cooked in a bread pan. If cooked in a shallow pan, it won't take as long for the center to get done. The temperature of a meatloaf when done should be 160 degrees F when checked with a probe.
A 3 lb meatloaf should probably take 1 1/2 hrs at 400F as long as it's slightly flattened and not in a true loaf shape.
