It doesn't. Expiration dates are on there for a reason. Keeping things after that date is inviting the possibility for it to become spoiled.
I would not eat it after about the third day, I would freeze it and enjoy it later. I got food poisoning really bad from ham so I never take a chance with it.
"Use by" means just that, anything left after the use by date should not be eaten.

It is not good practice to keep cooked meats frozen for long, but I'd say you should be fine up to a week or 2.

Usually there is a date on the ham for how long you can keep it. Many times I find cured hams have a refrigeration life of a month or two. After you open it, it should be good for 3+ days. Whatever you cannot eat within a couple of days, should be stored in the freezer with proper packaging. I find cutting it all up and putting it in multiple packages so I don't take out any more than I need at a time. I use the ham bone and scraps for soup, such as lentil, split pea and/or bean soup for a great change of pace.
The ham bone should be safe refrigerated for about 3 days. A good alternative is to freeze it. When you're ready to make the soup, you can just put it in the soup frozen and it will thaw in the soup.
It is normal for a spiral ham to turn a pinkish gray color when it is cooked. Fresh hams turn a whitish gray color when they are cooked.
