it depends on the size of the loin. A 15 lb tenderloin can make about 24 10 oz. steaks. a 30 lb sirloin will make about 40 10 ounce sirloin steaks after trimming the excess fat.

Is shell steak and NY strip steak the same cut?

A New York strip steak is not the same as a sirloin cut. They do however both come from the loin area of the cow. The difference is that the strip steak comes from a more tender part of the loin.

What part of the cow is t bone steaks from?

Cut from the center of the short loin, this steak has a T-shaped bone that separates the small tenderloin section(filet migon) from the larger top loin(New York steak). The porterhouse steak differs from the T-bone in that it contains a larger portion of the tenderloin. short loin Of the major wholesale cuts of beef, this is the most tender. It lies in the middle of the back between the sirloin and the rib, and the muscles in this section do little that could toughen them. The two main muscles in the short loin are the tenderloin and the top loin. The elongated tenderloin muscle (when separated from the bone and the rest of the short loin) can be sold as tenderloin roasts (often labeled chateaubriands), or cut into tournedos or filet mignon steaks. The top loin muscle with the bone attached is called a club steak. When removed from the bone, the same muscle is marketed as New York (or Kansas City) strip steak or Delmonico steak. When the bone is left in and portions of both the tenderloin and top loin muscles are included, the short loin is the source of porterhouse steaks and T-bone steaks. What type of beef is NY steak?

New York steak is from the loin of beef. On Porterhouse and T-bone steaks, it is the larger piece of meat (the smaller piece being the tenderloin). It is sold both bone-in and boneless. New York steak is also known as shell steak or strip steak, depending on what part of the US you live in. It is considered a premium cut of beef, and is suitable for cooking quickly over high heat.

Does the ny strip steak come from the t bone steak?

A New York Strip steak (also known as shell steak, Kansas City Strip, etc.) is the same cut of meat (short loin) that is the larger, top part of a T-Bone steak. The big difference, of course, is the "strip" is boneless.

What is the difference between a ribeye steak and a prime rib?

To start with "prime rib" is an Amerifictation or colloquialism. "Prime Ribs"-main ribs- is also a misconception, as ribs 1 to 6 protect the heart and are the animals prime ribs. Originally the"prime rib cut (it does not have to be roasted) consisted of only two ribs (11 and 12) and had to be cut from a prime grade carcass; anything else including ribs 6 to 12 was just standing rib considered as were all front quarter cuts second rate. Al (Alex-Alexander) D Girvan. New York strip or strip steak is better thought of as stripped loin or steak. It is the short (by far the best and most expensive of all roast able cuts) loin from which the bones and most importantly the coveted fillet or tenderloin have been stripped off, taken away, and reserved for sale at higher profit. Originally the entire fillet or tender part of the short loin was also known as fillet mignon (French). Porterhouse steaks (bone in cut)contain the very largest part of the tender- loin;the same part of the tenderloin tat is usually used for theChateaubriand steak recipe and presentation.
