A dominant allele expresses itself in every offspring in every generation. A dominant allele expresses itself irrespective of the other allele present along with it.
A recessive allele, however is masked by the presence of dominant allele. It can express itself only if the other gene in the allele pair is also recessive. As a result, it is not expressed phenotypically in every generation.
The dominant allele is the one that corresponds to the phenotype shown while the recessive allele is the one that corresponds to the alternate phenotype not shown by the organism. In pea plants (from Gregor Mendel's famous experiments), the "tall" allele was dominant over the "short" allele, so a pea plant with one or two "tall" alleles was a tall pea plant and a pea plant with two "short" alleles was a short pea plant.
In most animals, the genotype/phenotype link is much more complex - there are multiple alleles for some genes, some alleles show incomplete dominance or recessiveness, there are epigenetic influences, etc.

Dominant genes tend to overpower recessive genes. If brown hair is dominant(M) and blonde hair is recessive(m) then to have blonde hair you need m,m, brown hair would be M,M or M,m.

Most genes have two copies of each gene with dominant gene "trumping" the recessive one. The gene is recessive because it is said not to do much of anything unless paired with another recessive gene, but if paired with a dominant gene, the dominant gene wins.
