Even if a ring or oven control knob looks as if it is turned off the contacts in the switch may be stuck "on". You should be able to see which is the the faulty switch from the names or symbols that are on or near each knob by checking carefully exactly which ring or oven is staying hot. It may not be worth spending any money on an old stove, unless you are really into restoring antiques... So turn the stove off at its main switch on the wall and call in an electrician to help you decide what to do!
An over-the-stove range is an appliance that is mounted level with the counter-top, but not necessarily over a built-in stove. This gets Very hot from the burners. The only materials that I have seen used here are steel, glass, or porcelain. I would discourage the use of even high temperature paint.

Put wood inside instead of coal one day and see what happens. Size does not matter. If it is a large stove use large wood, if it is a small stove then use small wood.
There is a link below to an article in Wikipedia. I think the article could use some improvement, but there it is. There are a bunch of sites on the internet that are devoted to wood stoves. Really, to choose one, more information is needed on the type of stove. The original Franklin stove is very different from a masonry stove, and both are very different from a wood cook stove.
