yes, it has xylem and phloem. i learned that in 5th grade.NO! The stem of the celery is actually the thin disk at the base of the stalks. The part we eat is all leaf; specifically, the stalk is a modified petiole - the part of the leaf that connects to the stem. Each stalk is 1 leaf with a top blade that divides into leaflets. Farmers bred the plant to have the large fleshy petioles because people liked to eat them.

I learned that just this week while writing a leaf lesson for my kids.

Celery contains both a stem (called the stalk) and a leafy top. Generally, what is known as celery (the crunchy part) is the stalk.
