Some of the fat from meat will drip down into the flames - in lieu of the meat stewing in its own juices/fat. To keep the meat moist, spray or mist the meat with water frequently. Be sure to cook meat to the recommended internal temperature and don't allow the meat to burn. A medium heat is always best if you're not sure.
