You're probably thinking of the classic Spanish dish, paella.

Pronounced pai-el-ya, it's origins are from the Valencia region of Spain and the term refers to the pan used to cook this dish of rice, meat and seafood - a large shallow frying pan, usually with short handles on each side.

Paella is cooked in all parts of Spain in various forms, some with vegetables and some simply with, as you say, seafood, chicken and sausage. The sausage will frequently be chorizo, a pork sausage made with smoked paprika.

The paella technique isn't purely Spanish; it is common to all Mediterranean regions as well as other parts of the world. In Spain, though, la paella is traditionally cooked outdoors by men, using huge pans over a fire and intended to feed an entire community.

It's an amazing dish when cooked in the traditional Spanish way and not an experience to be missed when visiting Valencia!
