Corned Beef Spices

Ingredients:Coriander, Dill Seed, Brown Mustard Seed, Yellow Mustard Seed,Allspice, Bay Leaves, Cloves, Red Pepper, Black Pepper, Cinnamon, Cardamomand Star Anise
peppercorns, garlic, & bay leaves. whole cloves optional.
•8 allspice berries
•1 teaspoon black peppercorns
•2 bay leaves, crumbled
•2 fresh thyme sprigs or about 1/2 teaspoon dried leaf thyme
Cornbeef brisket can be brined with mustard seed, pickling spice,bay leaf,cracked black pepper,kosher salt, white vinegar, water and a touch of brown sugar...the liquid content for the brine can also contain some dark guiness beer for special occasions or a holiday preparation such as St. Patty's Day...any combination of the ingredients can be used according to taste....however beef brisket is normally used and soaked overnight in the brine and spice....you can buy corned beef already brined and spiced from your local grocery and bake (350*) it covered in a roasting pan with a little water for moisture. Carrots onions and celery can be sauteed and the brisket laid over them in the pan for added layer of flavor. Bake for 1hr depending on size, check for tenderness...when done, let rest before slicing.
Cabbage can be sauteed in butter with salt, extra pepper,and a pinch of sugar you can omit the sugar for a tablespoon of honey drizzled after cooked...or traditionally simply boiled in lightly salted water.
The brine recipe varies, but it almost always includes:
Pink salt (nitrates for that pink color)
Pickling salt
Bay leaves
Allspice
Juniper berries (sometimes)
Coriander
Red Pepper
Cinnamon
Cardamom
Dill seed
Star Anise
Brown Mustard seed
Yellow Mustard seed
Black Pepper
Cloves
Some places also add either brown or white sugar to the brine mix.

Corned beef is a salt-cured beef product where the meat has been treated with large grained rock salt which is also called "corns" of salt. How much salt is required depends on the cut and weight of the meat.
