Best Answer

It is the Gluten inside the flour that causes the cake to set when it is baked, the flour acts like scafolding and then the gluten is denatured and goes hard.

When baking a cake at 325degree in a gas oven vs electric oven should be set at what degree?

Gas ovens and electric ovens should both be set at 325 degrees in order to bake a cake at 325 degrees. The type of oven used does not effect the temperature at which a cake is baked.

What do you do if a cake is cooking only at the top?

If a cake is cooking only on the top, it may be that the oven is set on "broil" instead of on "bake," or that the bottom element of the oven may be broken. Another possibility is that the cake simply has not baked long enough to be "done" throughout. If the oven is set at too high a temperature, the top of the cake might scorch before the interior is baked. The oven temperature should be tested with an oven thermometer to determine whether the temperature setting is accurate.

Is a springform pan and a torte pan the same thing?

A springform pan has a flat bottom that is surrounded by a metal collar that has a spring clasp that fastens the sides around the bottom. The batter or pastry is poured into (or set down into) the pan. Once the cake or cheese cake or torte is baked and slightly cooled, loosen the edges with a flat knife and then unclasp the spring to remove the collar. This leave the pastry or cake sides free without having to invert the cake onto another plate bottom. In this way delicate cakes or heavy pastry can be baked without breaking by unmolding.

Why do cakes shrink while hot?

Because after they have risen and set they then lose steam and the protein in them shrinks a little meaning their volume decreases and they can pull away form the sides of the tin. If you mean why do they collapse, then you have not got the mixture or oven temperature correct or the cake has been shocked or cooled (did you open the oven door?) before the moisture cake has set and the razing gases have escaped.
