In some countries the meaning is bad luck; but it is inverse in other countries !

Nothing its a stupid superstition
over the left shoulder
This superstition originates from the belief that spilling salt brings bad luck. Throwing salt over the left shoulder is thought to ward off this bad luck or to blind any evil spirits that may be lurking behind you. It is a common superstition in many cultures and is believed to protect against negative energy.
Nope. Never was. It is, however, bad luck to believe in superstition.

If it is table salt (or sodium chloride) NaCl will be split by ionisation (being hydrolysed) in Na+ and Cl- ions by polar water molecules. Also any other soluble salt will be split in its constituent ions.
- sodium chloride is a deicing agent during winter - also an old superstition is possible
Do not spill salt, walk under a ladder, assemble 13 people round the same table, and so on.
