Improperly cooked food is a source of a lot of food based illnesses. Chicken and pork especially cannot be cooked pink like the red meats and must be fully cooked. If they're not they can be dangerous to eat.
Additionally food that is kept warm under heat lamps can also be the cause of illness.
Salmonella poisoning is another fairly serious illness, this can be present in both of the above, both uncooked or partially cooked food. It can present as just food poisoning and the various short to medium term symptoms around it, but it can also present more serious long term symptoms.
