The basic body and neck of guitars currently made are of wood/tone wood.
Depending on the expense of the guitar, could range from one solid or several pieces glued together of say, mahogany, basswood, poplar, maple or any variety of hardwood. Even plywood.
There are companies using composite materials as Graphite, carbon fiber, ebanol (Bowling ball material) or newly created composite materials as an alternative to wood that will carry and harvest a rich tone from vibration of strings. Many of these guitars are lighter weight than the traditional instrument and may be a bit pricier but as well made.
i.e. Parker guitars, Emerald guitars, Cort and a host of many others.
Nowadays, they are generally made of die cast metal.
Almost all guitar strings are made of steel nowadays for both acoustic and electric guitars. There are also nylon strings which are good for children playing guitar because of weaker finger skin and strength. A long time ago and in very poor countries strings can be made out of animal parts :S.
