The study of fish is called Ichthyology (from Greek: ἰχθυ, ikhthu, "fish"; and λόγος, logos, "knowledge"). So that means a Scientific name for "fish" might be Ichthy (plural form, Icthyes).Of course, Pisces ("pie-seez") is the name of the constellation known as "The Fishes", and piscis(pis-kis) is the Latin word for "fish" (pisce - "pis-kee" - is the plural form of piscis). Any of these, or none of them, could be used as a "Scientific" name for "fish" (pisces actually was the Scientific classification for "fish" at one time, but is no longer used).

The problem is, it isn't really so simple.

The Scientific name of any one specific fish, or even class of fish, depends on a variety of factors, including (but not limited to) fin shape(s); eye location; whether there is an internal skeleton or not; mouth shape; body shape; where the fish lives (fresh water or sea-water); etc. There are a variety of classes, orders and families, in reference to fish, so it is not really possible to classify all fish under one generic "super name" such as pisces or ichtyes.

Also, Scientific names are always being redefined as new information is acquired.

When referring to a particular species of fish, the two-word (binomial) Scientific name is sometimes used in conjunction with the common name. The binomial name is always italicized and consists of the genus (the generic, or "group" name), which is listed first and is always Capitalized, and the species (or specific type of fish), which is listed second and not capitalized. For instance, a fairly common aquarium fish, the Oscar, is currently Astronotus ocellatus and the Tiger Shark (a sea-dwelling fish) is currently Galeocerdo cuvier. If the fish is a variant of a species (sub-species), it is also italicized and listed last (as with the Scientific name of humans: Homo sapiens sapiens - Genus Homo, species sapiens, sub-species sapiens); this would, of course, be a trinomial (three-word) name.

The binomial name is only the last part of the "full" Scientific name ("classification"), which can include Domain; Kingdom; Phylum (and any sub-phylae, if any); Superclass; Grade; Class; subclass; Superorder; Order; Family; Genus; Species (and sub-species, if any). The West Indian ocean Coelocanth, a living example of a "prehistoric" fish, has the Scientific Classification as -- Kingdom: Animalia; Phylum: Chordata; Class: Sarcopterygii; Subclass: Coelacanthimorpha; Order: Coelacanthiformes; Family: Latimeriidae; Genus: Latimeria; Species: L. chalumnae(the "L" in this case designates the genus Latimeria).

Scientific names are derived from Latin and Greek, as well as other languages, and are then "Latinized" (i.e., made to resemble Latin in form).
