Some personal opinion here.
I like the look of a nicely finished edge, without metal. There are aluminum trim & transition strips that make a nice fabricated edge, you can see them at any flooring store.
As an old flooring installer in my younger days we were trained to turn & tack transitions and not use the tacky aluminum trim.
Just a personal preference. The turned under carpet takes a bit more craftsmanship, but there is nothing to keep the carpet edge from getting wet when the tile is cleaned.
There is also the option of using a wood transition which can look nice too, all a matter of taste.
The turn & tack I like is possible but much harder if the floor is a concrete slab, but if your installer knows about Z Bar you might have a good guy. it's an old timers trick.
I don't think folding is the right way to approach this transition. My carpet has a tack strip installed next to the tile and the carpet is cut so it lays right next to the tile edge. The tack strip holds it secure. There are also different joint transition trim pieces you can use if the height variation is to great. Check out Home Depot or Lowes.
home improvement centers have floor scrapers they will rent to you. they are a heavy machine with two wheels and a vibrating blade in front that you walk behind, great for pulling up tile, carpet, linoleum, etc. . .
Either way, there is a metal strip available that has a groove in one side for the tile and a lip that goes over the carpet. The most common brand name for these metal strips is Schluter.
yes you can, but that doesn't mean that it's the best solution. the best way is to remove the old tile. period.

The best way to cut any tile is to remove it from it's setting, carefully and then cut it on a wet tile saw.
the best way to lay carpet tiles is to keep the edges tightly fit.
Do your best and then bleach the stain if your carpet is white.
If you have a very soiled carpet the best way to clean it would be a steam cleaner.
For tiles I'd say good old fashioned soft scrub or bar keepers friend. You can also use bleach but you need a mask. For carpet Stanley Steamers is always a choice or you can rent a steamer as well.
