The name of this product comes from the mallow, a widespread plant that has been used for ever as a cure for sore throats. In Britain the plant is called marsh mallow because it grows best in marshlands. It produces a sap which foams up and was used as a chewable medicine. Today's marshmallow is made from corn starch and sugar and has no medical value. However it is foamy and chewable like the original.

Marshmallow candy dates back to ancient Egypt where it was a honey-based

candy flavored and thickened with the sap of the root of the

Marsh-Mallow plant (althea officinalis). Marsh-Mallow grows in salt

marshes and on banks near large bodies of water. It is common in the

eastern United States.

Until the mid 1800's, marshmallow candy was made using the sap of the

Marsh-Mallow plant. Gelatin replaces the sap in the modern recipes.

Oddly enough the origin of the "marsh mallow" is in its name.

A marsh mallow is plant that grows in swamps. Originally mediacal people (herbalists) would collect the plant and make sore throat remedies from extracts of the stem and roots.

The Egyptians used this same extract to make sweets with nuts and honey. Sometimes othe sweet makers would simply boil down the extract with sugar to make chewy candy.

In the early 1800s French confectioners (candy makers) refined this process by whippin the extract and sugar to a froth befor letting it set. In a move to make the candy cheaper (and easier to make) the whites of eggs were substituted for the marsh mallow sap.

These early marshmallows were not the little barrel shapes familiar to the modern consumer, they were cut squares. The process was eventually automated to form the modern plug shapes. The product was rolled in powdered sugar to stop it from sticking ogeher.

The ancient Egyptians used the mallow root for making their candied delicacies for their Gods, Nobility and Pharaohs over 2000 years ago.

Marshmallows is of uncertain origin, but it was first produced from a plant (known as guimauve in French) growing in mainland Europe, around the Mediterranean Sea. It is also known as a fact that French candymakers greatly improved the fabrication in the 19th Century. After WWII, an American industrialised the production.


Marshmallows were made in 1948.
