The chemicals and dyes in new carpet takes causes the odors, and it takes while for the odors to dissipate, but there are a couple of things you can try. Sprinkle baking soda on the carpet, let sit overnight, then vacuum. Or you can spray the carpet with Febreeze. What I would do though, is both. I would first use the baking soda then I would spray with Febreeze AFTER vacuuming up the baking soda.

You could, but it's not advisable. Moisture content from the compressor has to go somewhere - usually into the drip pan, but if that overflows, it's going to wind up in the carpet, which acts like a sponge and will harbor that stale water and the associated odors until you can move the fridge and clean up the spills.
