Yiddish.

Historically, most Polish Jews were not well integrated with the general Catholic Polish population. As a result, very few of them spoke Polish unless they lived in the cities like Krakow or Warsaw. The overwhelming majority of Polish Jews spoke varying dialects of Yiddish which was a German-based language with words taken from Hebrew, Polish, Russian, and Ukrainian.
